Charred Broccoli, White Bean, and Lemony Freekeh Salad

You can make this colorful salad with charred broccoli, hearty white beans, and nutty freekeh, all mixed together with a tangy lemon dressing. This dish is filling and healthy, and its great for lunch or as a side.

Ingredients:

  • 1 head broccoli, cut into florets
  • 1 can white beans, drained and rinsed
  • 1 cup freekeh
  • 1 lemon, zest and juice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Handful of fresh parsley, chopped

Instructions:

Preheat oven to 400F 200C

Toss broccoli florets with 1 tablespoon olive oil, minced garlic, salt, and pepper on a baking sheet

Roast in the preheated oven for 15-20 minutes until charred and tender

Meanwhile, cook freekeh according to package instructions

Once cooked, fluff with a fork and set aside to cool slightly

In a large bowl, combine the cooked freekeh, white beans, roasted broccoli, lemon zest, lemon juice, remaining olive oil, and chopped parsley

Season with additional salt and pepper if needed

Toss everything together gently until well combined

Serve warm or at room temperature, garnished with additional parsley if desired
