This Vegan Lemon Basil Pasta Salad is a tasty and healthy dish thats great for any event. Every bite is a burst of flavor from the sour lemon, the fragrant basil, and the fresh vegetables. Because its vegan, high in carbs, and low in fat, its a healthy and tasty choice for a meal or side dish.

Ingredients:

  • 8 oz whole grain pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup lemon juice
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

Cook pasta according to package instructions, then rinse under cold water and drain

In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, and basil

In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, garlic, salt, and pepper to make the dressing

Pour the dressing over the pasta salad and toss until well combined

Refrigerate for at least 30 minutes before serving to allow flavors to meld
