Ingredients:
- 8 oz whole grain pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup lemon juice
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
Cook pasta according to package instructions, then rinse under cold water and drain
In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, and basil
In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, garlic, salt, and pepper to make the dressing
