This vegan tortilla soup is easy to make, tastes great, and is great for a cozy night in. This soup is full of healthy vegetables, beans, and spices that make it a tasty and filling meal.
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeo, diced optional, for heat
- 1 can 15 oz diced tomatoes
- 4 cups vegetable broth
- 1 cup corn kernels fresh or frozen
- 1 can 15 oz black beans, drained and rinsed
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 lime, juiced
- Tortilla chips, for serving
- Fresh cilantro, chopped, for garnish
- Avocado slices, for garnish
- Red onion, thinly sliced, for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onion and cook until translucent, about 5 minutes
Add minced garlic, diced bell pepper, and jalapeo if using
Cook for another 2 minutes
Stir in diced tomatoes, vegetable broth, corn kernels, black beans, ground cumin, chili powder, salt, and pepper
Bring the soup to a simmer and let it cook for 15-20 minutes to allow the flavors to meld
Remove from heat and stir in lime juice
Serve hot, garnished with tortilla chips, chopped cilantro, avocado slices, and thinly sliced red onion
