Gingerbread Muffins

These Gingerbread Muffins are a fun and healthier way to start the holiday season. Whole wheat flour, almond flour, and warm spices like ginger and cinnamon are used to make them. Just what you need to enjoy the holidays without feeling guilty

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup almond flour
  • 1/2 cup molasses
  • 1/4 cup unsweetened applesauce
  • 1/4 cup Greek yogurt
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup warm water
  • 1 tsp vanilla extract

Instructions:

Warm your oven up to 350 F 175C and put paper liners in a muffin tin

There are baking powder, baking soda, ground ginger, ground cinnamon, ground cloves, nutmeg, and salt in a large bowl

They should all be mixed together

With a whisk, mix the molasses, Greek yogurt, honey, coconut oil, egg, warm water, and vanilla extract in a different bowl

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Make sure not to mix it too much; a few lumps are fine

Fill up each muffin pan cup about two thirds of the way to the top with muffin batter

After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean

When you take the muffins out of the oven, let them cool for a few minutes in the pan before moving them to a wire rack to cool all the way through

You can eat your healthy Gingerbread Muffins for breakfast or as a holiday snack
