Ingredients:
- 8 slices of whole grain bread
- 2 large ripe tomatoes, thinly sliced
- 1 cup fresh basil leaves
- 1 cup raw cashews, soaked overnight
- 3 tablespoons nutritional yeast
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Soak cashews in water, then add nutritional yeast, lemon juice, minced garlic, salt, and pepper
Process the mixture in a food processor
To make cashew mozzarella, blend until smooth
On 4 pieces of bread, spread a lot of cashew mozzarella
On top of the cashew mozzarella, put tomato slices and basil leaves
Add the last few slices of bread on top to make sandwiches
Use olive oil to cover the outside of the sandwiches
With the grill pan or pan in the pan on medium heat, heat it up
Press or grill the sandwiches for three to four minutes, or until they are golden brown and crispy
Carefully turn the sandwiches over and cook for three to four more minutes on the other side
Take it off the heat and let it cool down a bit before you serve
