Rigatoni with Chicken Sausage and Greens

You can feel full after eating this hearty and healthy pasta dish with chicken sausage, mixed greens, and rigatoni. The garlic and red pepper flakes give the dish more depth, and the Parmesan cheese makes the finish creamy. This recipe is great for busy weeknights because its quick and easy.

Ingredients:

  • 1 lb rigatoni pasta
  • 4 chicken sausages, sliced
  • 4 cups mixed greens such as kale, spinach, or Swiss chard, chopped
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions:

Follow the directions on the package to cook the rigatoni until it is al dente

Remove the water and set it aside

Warm up the olive oil in a big pan over medium-low heat

Add the red pepper flakes and minced garlic

Saut for one to two minutes, until the garlic smells good

Put chicken sausage slices in the pan and cook for 5 to 6 minutes, until they turn brown

It will take about 34 minutes of cooking after adding the chopped mixed greens to the pan for them to wilt

Add the cooked rigatoni to the pan with the sausage and greens

Add pepper and salt to taste

Add two to three more minutes of cooking to heat everything through

Grate some Parmesan cheese on top and serve hot
