Ingredients:
- 1 cup fresh strawberries, hulled and chopped
- 1/2 cup dry red wine choose a keto-friendly option
- 2 tablespoons powdered erythritol or your preferred keto-friendly sweetener
- 1/2 cup sugar-free dark chocolate chips
- 1 tablespoon coconut oil
Instructions:
In a blender, combine chopped strawberries, dry red wine, and powdered erythritol
Blend until smooth
Pour the strawberry-wine mixture into popsicle molds, leaving a little space at the top for expansion
Insert popsicle sticks into each mold
Freeze for at least 4 hours or until solid
Once the popsicles are frozen, prepare the chocolate coating
In a microwave-safe bowl, melt the sugar-free dark chocolate chips and coconut oil in 30-second intervals until smooth
Remove the popsicles from the molds and dip each one into the melted chocolate, coating it evenly
Place the chocolate-dipped popsicles on a parchment-lined baking sheet and return them to the freezer to set for about 10 minutes
