With this delicious Tofu Rice Soup, you can taste the strong, fragrant flavors of Thai food. When you mix coconut milk, lemongrass, and kaffir lime leaves, you get a rich and savory broth that goes well with the tofu, rice, and colorful vegetables.
Ingredients:
- 200g tofu, cubed
- 1 cup jasmine rice, cooked
- 4 cups vegetable broth
- 1 can 400ml coconut milk
- 1 lemongrass stalk, smashed
- 3 kaffir lime leaves
- 1 red chili, sliced
- 2 tablespoons soy sauce
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 cup mixed vegetables carrots, mushrooms, bok choy
- Fresh cilantro leaves for garnish
- Lime wedges for serving
Instructions:
Lemongrass, kaffir lime leaves, soy sauce, ginger, garlic, and vegetable broth should all be put together in a large pot
Over medium-low heat, bring to a boil
Place tofu, sliced chili, and mixed vegetables in the pan
After 10 to 15 minutes, the vegetables will be soft and the tofu will be warm
Add the cooked jasmine rice and stir it in
Simmer for five more minutes
Take out the kaffir lime leaves and the stalk of lemongrass
Check the seasoning and make changes if needed
Add fresh cilantro leaves and lime wedges on top while the food is still hot
