This Rustic Gingersnap Stew combines tender beef, hearty vegetables, and the unique flavor of gingersnap cookies for a comforting and delicious meal. Perfect for chilly days
Ingredients:
- 1 lb beef stew meat
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup crushed gingersnap cookies
- 2 carrots, sliced
- 2 potatoes, diced
- 1/2 cup chopped celery
- 1/4 cup apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
Over medium-low heat, brown the beef stew meat in a large pot
Put in the minced garlic and chopped onion and cook until the onions are soft
Add the beef broth and bring the whole thing to a slow boil
Until the cookies are gone, stir in the crushed gingersnap cookies
Dice the potatoes and celery and add them along with the apple cider vinegar, Worcestershire sauce, dried thyme, salt, and pepper
Let it cook on low heat for an hour, or until the vegetables are soft and the stew gets thick
If necessary, change the seasoning
